A deer rub describes the abrasions caused by a male deer rubbing his forehead and antlers against the base of a tree. Easy to spot in areas with high deer populations, hunters use them to find ideal locations for hunting. They appear in the late summer or early fall, when male deer rub the velvet off their newly-acquired antler growth or during rut season. The area between the forehead and antlers contains a large number of apocrine sweat glands, and leave a scent that communicates a challenge to other male deer while also attracting potential mates. The size of the rub usually varies with the size of the deer.

A. As a former chef who has cooked various cuts of venison, it depends on the cut and how you want to cook it, I agree a liquid or wet marinate is best, but if your using a cut like loins, racks or tenderloins, but shoulder or leg cuts being they are the most used muscle, it will need to be a good veg based acidic marinated and stewed or slow cooked for a fair amount of time. I like the tender cut best, but the others are tastey also, just make sure you cook it right and long enough, if you make a stewed item treat it like stewing beef.

deer hunting question?
Q. I am deer hunting on 10 acres in wisconsin. There is plenty of deer trails and beds, rubs and tracks, and plenty of food spots but I've only seen one deer and it was in the afternoon 20 minutes before season ended. I've used cover scent as well, and have hunted from a tree stand and natural blind. The weather has been unusual for this time of year: low 50's, sunny, and very little wind. Why haven't I seen many deer? Am I doing something wrong?

A. You just answered your own question. Deer are mostly nocturnal animals. Evolution has made it this way...as they encounter fewer predators at night. The number one predator of deer has always been humans. And, it was not until the invention of the electric light bulb that deer would need to fear humans at night. For hundreds of thousands of years, deer would feed at night while the cavemen and women would retreat to their caves for safety.
